Zucchini & Carrot Latkes


Ingredients: *1 medium potato

* 3 medium Zucchinis  * 2 medium carrots *  1 onion *  1/2 cup of Tahini * 1/2 cup of Gluten Free flour (best to use chickpea flour or lentil flour) *  1 tsp salt  * 1/2 tsp pepper


Procedures: ​1)Finely chop the onion and place in a bowl 2)Peel the potato and chop it to 8 or so large pieces; chop each zucchini to 4 parts, And finally chop each carrot to 3 parts 3)Then grate the potato by hand or in a food processor using the large holes of the grater 4)Using the same size holes grate the zucchini 5)switch to a medium or small hole of the grater and grate the carrots 6)Add all the grated veggies to one bowl and once all the veggies are in the bowl add 1/2 a cup tahini and mix well until the tahini is covering all the veggies (approx. 2-3 min) 7) Then add 1 tbsp salt and 1/2 tbsp pepper as well as 1/2 cup of chickpea flour or any gf flour of your choice and Mix well until all veggies are coated (another 1-2 min) 8)Line a pan with a baking sheet or silicone mat and lightly grease with oil, this is optional but very recommended to get the more traditional flavor of Latkes 9)Prepare the latkes by taking a small part of the mixture (about a small ice cream scoop/ you can use an ice cream scoop if you have one); and making into a ball and then squishing it down onto the pan 10)Then put in the oven and bake for 35 minutes at 350 degrees Fahrenheit or 180 degrees Celsius. Take them out and carefully turn them over and bake for another 10 minutes
