Veggie & Tofu Skewers


Ingredients – for 4 skewers

½ a block of Tofu

8 Mushrooms

½ a Bell Pepper

1 small Onion

8 Cherry Tomatoes

1 small Zucchini

1 tbsp chickpea flour

¼ cup water

¼ cup tamari sauce

1-2 tsp of smoked paprika

1-2 tbsp of garlic powder

2 tbsp tahini


Procedures

1) Dice the tofu into medium size cubes (12-16 cubes would be good)

2) To a tupperware add the chickpea flour, water, smoked paprika and garlic powder; mix everything together.

3) Add the tofu cubes into the tupperware, close the lid and mix it around. Let it sit for 30 min to an hour.

4) Dice the bell pepper into 9 or so cubes, slice the zucchini to 8 slices, and chop the onion to 8 cubes.

5) Wash the cherry tomatoes and mushrooms.

6) Add to a large bowl all the veggies, along with the tamari sauce, smoked paprika and garlic powder, close the bowl or tupperware with a lid and mix around. Let it sit for 30 min to an hour.

7) While the tofu and veggies are marinating, if possible, mix it around every 10 minutes or so.

8) After marinating for 30 min to an hour, put the veggies and tofu on the skewers in any order you would like. I like to have each veggie twice at least and the tofu as well.

9) Mix the 2 tbsp of tahini with 2 tbsp of water and drizzle the tahini sauce over the skewers.

10)Throw the skewers on the grill or cook in the oven at 350 degrees F for 30-40 min.
