Veggie Loaded Hash Brown Bake


Ingredients:

6 medium potato (1kg or 2 lb)

1 onions

6-10 mushrooms

1-2 cups bell peppers strips (I use frozen ones)

3-4 cups spinach

Spices of choice (I use 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, 1 tsp paprika, and 1 tsp turmeric)

Procedures:

1. Pre-heat the oven to 400 °F or 200 °C

2. Slice the onion, mushrooms and bell pepper (unless you buy them already cut and frozen)

3. Grate the potatoes either by hand or using a food processor (you can also buy potatoes that have been grated in the frozen section)

4. Add the potatoes into a large bowl with all of the spices and mix together until the potatoes are all covered with spices

5. Add to the bowl the onion, mushrooms, and bell peppers and mix together.

6. Then in a pre-lined baking sheet add a bed of spinach on top add the hash browns mixture, and then some more spinach.

7. Put in oven for 30-40 minutes, I like to check on it every 15 minutes or so to either add some water, so nothing burns or to turn it over

8. When crispy it is ready to serve and enjoy!
