Veggie Fried Rice


◗ Ingredients:

3 cups of brown rice, cooked (or any other grain of your choice)

2-3 cups of your favorite fried rice veggies (I am using a frozen mix of corn, peas, carrots, and green beans)

1/2 cube of firm tofu

1/2 tsp turmeric

1 tsp black salt

1 tsp garlic powder

2 tbsp tamari sauce (or soy sauce)

1-2 green onions (for garnish)


◗Procedures:

1) Cook your rice or any other grain of your choice.

2) Drain and press the tofu.

3) Cut up your veggies if you are using fresh ones or defrost your veggie mix. If you are using frozen veggies the easiest way to defrost them is by adding them to a bowl and covering them with boiling water for 3-5 minutes and then draining the water.

4) Heat up a pan with a splash of water and crumble the tofu finely into the pan, add in the spices and mix together.

5) Move the tofu to one side of the pan and add in your veggies, if fresh sauté them with water until soft, if frozen let them finish defrosting and heat up.

6) Add in the rice and tamari sauce (or soy sauce) and everything together.

7) Serve, top with the green onion and enjoy.
