Vegan & Oil Free Tzatziki Dressing



Ingredients:

2/3-1 cup of cucumber, sliced

¼ cup of cashews

¼ cup of hemp seeds

1 large garlic clove or 2 small ones, peeled

Juice from ½ a lime or lemon

1 tsp of dill

1/3 cup water (can do less or more depending on the consistency you want)

Procedures:

1) Start by soaking the ¼ cup of cashews in lukewarm water for 30-60 minutes

2) When the 30-60 minutes are up, drain the water from the cashews, slice your cucumber, and peel your garlic cloves.

3) Then to a blender cup add the cucumber, cashews, hemp harts, garlic, the juice form the lime/ lemon, the dill, and the water.

4) Blend it all up until smooth, if you would like for it to be runnier add more water and if you would like it to be more like a dip add less water when blending.

5) Then you can store in an airtight container in the fridge for a few days to enjoy on top of salads or cooked veggies.
