Sweet Potato Latkes

Ingredients: * 1 large sweet potato    * 3 large potatoes * 1 onion * 1 tbsp oil (optional) * 1 tsp salt * 1 tsp pepper


Procedures:

1) Peel the large sweet potato and steam it until softened 2) Meanwhile Chop the small onion (in a pulse food processor or by hand) and sauté by adding a bit of vegetable broth or water to the pan and cook until it becomes transparent, add water or vegetable broth as needed to deglaze the pan 3)Once the sweet potato is soft, mash it in a bowl 4) Mix the mashed sweet potato with the onion, and add in the spices and optional the oil. 5) Peel the 4 potatoes, chop them into large chunks and grate the potatoes by hand or in a food processor using the large holes of the grater 6)Add the grated potatoes to the bowl and mix everything together well until all the grated potatoes are covered with mashed sweet potato (approx. 2-3 min of mixing well). 7) Put baking sheet / silicone mat on a pan and lightly grease with oil (optional to grease with oil). 8) Create the latkes by taking a small part of the mixture (about a small ice cream scoop/ you can use an ice cream scoop if you have one); and making into a ball and then squishing it down onto the pan. 9)Lightly add some oil on top of the latkes for more crispness (optional step!) 10) Put in oven and bake 35 minutes at 350 degrees Fahrenheit or 180 degrees Celsius. Carefully turn over the latkes and bake for another 10 minutes
