◗ Ingredients:
1 Large onion
2-3 medium carrots
4 celery sticks
2 medium sweet potatoes
3-4 medium potatoes
1 28oz. can of diced tomatoes (or 3.5 cups fresh tomatoes diced)
3-4 cups black beans
3-4 cups pinto beans
2 tsp. Chili flakes
1.tsp. Black pepper
2 tsp. Pink Himalayan salt
2 tsp. Cumin
2 tsp. Paprika
(all seasoning to taste)
◗Procedures:
1. Dice the onion to medium cubes, slice the carrot to half coin shapes, slice the celery, dice the sweet potato to small cubes, dice the potatoes into small cubes
2. Heat up a large pot and add some vegetable broth to the bottom of the pot, and add in the onion, carrots, and celery, mix and let cook for 7-10 minutes
3. Next add in to the pot the potato and sweet potato, mix again and let cook another 5-7-10 minutes (add more vegetable broth if necessary, to deglaze the pot)
4. Then add the diced tomatoes can and add water or vegetable broth until it covers everything; add in all the condiments to taste, stir and let cook for another 12-15 minutes.
5. Then add the black beans and pinto beans either precooked or from a can, mix and cook for another 10-12 minutes
6. Serve and enjoy (Keep leftovers either in the fridge for a few days or freeze for later, the longer it sits, the more flavorful it becomes)
