Shepherd's Pie



Ingredients: * 1 onion  * 2 carrots * 3 celery sticks * 15 cremani mushrooms * 1-2 handfuls of olives * 1 cup of pre-cooked lentils; steps to cook at home: https://youtu.be/NH7MDzlFOUk * 1 tsp salt * 1 tsp paprika * 1/2 tsp pepper * 1/2 tsp cumin


Procedures: 1. Dice onion, slice carrot to half tins, slice the celery sticks, thinly slice mushrooms and also slice the olives or buy pre-sliced olives 2. Warm up a pan, add a splash of water, and sauté the onion, carrot and celery for about 5 minutes, add water as needed to deglaze the pan 3. Next add the mushrooms to the pan and sauté for another 5-7 minutes, again add water as needed to deglaze the pan (remember mushrooms extract a lot of liquids though while cooking) 4. Finally add the cooked lentils to the pan, mix all together for a final minute and turn off heat 5. Take half of the veggies from the pan and put into a blender, blend until you get a smooth paste 6. In a bowl add the veggie paste from the blender, the non blended veggies and lentils, the sliced olives, as well as all the spices. Mix well until all flavors are well combined 7. Then take your lined pan (optionally line it with oil or a baking sheet) and add the mixture to the bottom of it and spread it evenly throughout the pan 8. On top of that add a layer of mashed potatoes! I have a simple recipe for mashed potatoes right here: https://youtu.be/65koDmHuWm0 ; I then like to take a fork and create squares on the top of the mashed potatoes 9. Then it is time to pop it in the oven at 375 degrees Fahrenheit or 190 degrees Celsius for 30-40 minutes, check it every 10-15 minutes until it is crispy on the top of the mashed potatoes
