Russian Potato Salad- Ready in under 20 minutes



Ingredients:

For salad

3 medium to large potatoes (or 6 small)

3 medium to small carrots

1-1 ½ cup peas (I like using frozen peas)

¼ of large onion (or ½ of small onion)

1-2 pickles (optinal)

Dressing:

½ cup mayo

1 tsp garlic

1 tsp salt

½ tsp pepper

1 tsp dried dill or some fresh dill (optional)

Procedures:

1) Start by dicing your potatoes into small cubes as well as dice your carrots into small cubes.

2) Steam the potatoes and carrots for about 10-15 minutes until soft

3) Meanwhile defrost your peas- I like adding them into a bowl with some boiling water and after 5 minutes straining them

4) Also finely dice your onion

5) Prepare your dressing by mixing all the ingredients together in a bowl

6) Once the potatoes and carrots are soft, I like letting them cool for a few minutes

7) Then add the potatoes, carrots, peas, onion, and dressing into a large bowl and mix until everything is well combined, and everything is covered in dressing
