Roasted Tofu & Potato Tacos


Ingredients:

1 extra firm tofu cube

5-7 medium potatoes

2 medium onions

3 cups of sliced pepper

1 avocado

1 lime

1 green onion

6-8 cherry tomatoes

Store bought salsa Diced tomatoes (fresh or store bought)

Procedures:

1. Dice extra firm tofu into ¼ inch squares and put them into a bowl with cumin, paprika, and amino acids or a type of soy sauce to marinate and let sit for 10-15 minutes to absorb the flavors

2. Meanwhile dice up the potatoes into small cubes and move them into a bowl to season them by adding a bit of water to give moisture to the potatoes for the condiments to stick better, add paprika and cumin (and any other spices of your choice), mix up all the potatoes to make sure they are all equally coated in condiments

3. Move potatoes to a pre lined baking sheet and cook for 30-40 minutes at 375 degrees Fahrenheit or 190 degrees Celsius

4. Also add the tofu to a pre lined baking sheet and pop in the oven for 20-30 minutes

* Half Way through take out the pans to mix around and return to oven, this will allow all sides to cook evenly

5. Next slice up onions to make caramelized onion rings, warm up a pan with a bit of water and add in the onion rings, sauté until they are golden brown, add water as needed to deglaze the pan

6. Also sauté in a pan with a bit of water some pepper strips (I use frozen pre sliced ones)

7. Prepare the Guacamole by mashing up the avocado adding the juice of a lime, salt, as well as some sliced tomato and onion; mix it all together

8. For the Salsa I mix in ¼ cup store-bought salsa with 1 cup canned diced tomatoes (you can use fresh tomatoes or make your own salsa at home)
