Red Lentil Tortilla Recipe & How to make Avocado Quesadillas





Ingredients

Red Lentil Tortillas

½ cup red lentil flour

1 Cup water

Guacamole

½ avocado

½ small onion

½ tomato

Salt & pepper to taste

1 lime/lemon, juiced


Procedures

Red Lentil Tortillas

1) Blend your red lentils into until you get a red lentil flour.

2) Add into a bowl ½ cup of red lentil flour, along with 1 cup of water added gradually as you mix.

3) Once you get a smooth batter, warm up a pan with a bit of oil to prepare the tortillas.

4) Pour into the pan about ½ cup of the batter and spread it out on the pan to a thin layer.

5) Let it cook on one side for about 2-3 minutes, flip and cook for another minute on the other side, and then remove to a plate.

6) Repeat steps 4&5 with the remainder of the batter (you should get 3-4 tortillas depending on the size).

Guacamole

1) Finely dice the onion and tomato.

2) Using a spoon scoop the avocado from the skin and put into a bowl and mash up.

3) Add the juice of the lime/lemon into the bowl, along with the salt and pepper and mix.

4) Add in the onion and tomato and give it a final mix.

Avodillas

Put the tortilla back on the pan, add the guacamole onto half of it, add some hot sauce (optional), close the tortilla in half, let it cook for about a min on each side and remove from the pan.

*you can choose to not heat it up, that’s just what I really enjoy.
