Red Lentil & Corn Patties


Ingredients: *  1 ¼ cup red lentils   *  2 Tbsp flax seeds * 3 carrots * 3 cups corn *  1-1 ½ cups water * 1/3 cup ground almonds * 1/3 cup garbanzo flour * 2 Tbsp paprika * Salt & Pepper to taste


Procedures: 1. Pre-heat oven to 350 degrees Fahrenheit put both trays in the oven, one 2. Add to a blender the lentils and flax seeds and blend until it becomes a flour 3. Add it to a large bowl and add 1-1 1/2 cups water in small portions and mix until you get a paste like consistency and let sit for 10 minutes 4. Meanwhile chop the carrots finely 5. Once the 10 minutes are up add to the batter spices the carrots, the corn, the ground almonds (almond flour), and the garbanzo flour. Mix it all together, I like mixing after adding each ingredient 6.  Once you have a unified batter make it into patties 7. Put in the oven; on the top shelf one on the bottom shelf for 10 min, then switch the trays the upper goes to the bottom shelf and vise versa for another 10 min, then takes the trays out, flip the patties, put one on the top shelf one on the bottom shelf for 5 min, then switch the trays the upper goes to the bottom shelf and vise versa for the last 5 min
