Quinoa Salad

Ingredients: * 3 cups of Quinoa * 1/2 a small onion * 2 handfuls of cherry tomatoes (about 20 cherry tomatoes/ 2 small tomatoes) * 1 whole avocado * Juice of 1/2 lemon * 2 tsp of salt * 2 tsp of pepper
Procedures: 1. Finely chop the onion, Slice the cherry tomatoes to half (or dice the 2 small tomatoes, Dice the avocado, squeeze the juice form the lemon 2. Add to a large bowl the quinoa you have pre-cooked (how to cook perfect quinoa is linked above), the onion, tomatoes, lemon juice; and spices; mix it all together 3. Add in the avocado and give it a final stir (good to add the avocado last so doesn’t get to mashed into the quinoa)
