◗Ingredients:
- Salad:
· 3 cups quinoa, cooked
· 2 cups chickpea, cooked
· 1 large/ 2 small zucchini
· 10-15 cherry tomatoes (or 1-2 tomato)
· 1/4 red onion
· Seasoning of your choice
- Dressing:
· ~ 3 tbsp of tahini
· ~ 2 tbsp of water
· ½ lemon, juiced
◗Procedures:
1. Add the cooked quinoa to a bowl.
2. Toast the chickpeas with the seasoning of your choice. I like to use about 1 tsp of turmeric paprika, garlic powder, cumin, and onion powder.
3. Once they crisp up and ready, I transfer them into the bowl with the chickpeas.
4. Chop up the zucchinis into quarter slices. Add to a pan a bit of water, let it warm up, and add the zucchinis. Sauté the zucchinis for a few minutes, adding water as needed to deglaze the pan. When cooked to your liking, transfer them into the bowl.
5. Chop up the tomatoes and add them into the bowl, give everything a quick mix.
6. Finely dice the onion, add the onion into the salad and give everything a good mix.
7. Prepare a sauce for the salad by mixing some tahini with water.
8. Top the salad with the tahini sauce, as well as some lemon juice and it was ready to be enjoyed.
