Mushroom& Zucchini Soup

Ingredients: * 1 large onion, diced * 2 leeks, sliced * 3 garlic cloves, sliced * 3-4 celery sticks * 3 zucchinis, cut to half coins * 10-15 Mushrooms, sliced * 7 cups of vegetable broth or water * 1/2 tsp salt * 1/4 tsp peper * 1/2 tsp turmeric
Procedures: 1. Warm up a pot with a bit of water or vegetable broth and cook the onion, leeks, garlic and celery for about 5 minutes with a closed lid. Add liquid as needed to deglaze the pot. 2. After the 5 minutes are up, add the zucchini and cook for an additional 5 minutes 3. Add all the spices, mix and add in the rest of the liquid, either veggie broth or water, and cover it up. 4. Bring it to a boil and cook for 10 minutes 5. Then add in the sliced mushrooms and cook for a final 5 minutes 6. Then it is time to serve it up, but the longer you let it sit the richer the flavors will be 7. When I serve it I like to add to it some homemade pesto, which I have a recipe for; or with Miso paste.
