Mushroom & Collard Greens Frittata


◗ Ingredients:

1 medium onion

8-10 mushrooms

2 cups of collard greens

1 ½ cup chickpea flour

1 cup water

2 Tbsp nutritional yeast (optional)

Salt and pepper to taste


◗ Procedures:

1) Dice the onion, slice the mushroom, and remove stem and slice collard greens.

2) In a pan add a splash of water, add the onions, cover, and let cook for 3-5 minutes.

3) Next add in the mushrooms and cook for another 5 minutes with a covered lid.

4) Finally add the collard greens into the pan, mix them in, turn off the heat, and let sit for a couple minutes with a covered lid.

5) Meanwhile we will prepare the batter, to a bowl add the chickpea flour, along with the nutritional yeast and seasoning of your choice; add in the water and mix all together until you get an even batter for the frittata.

6) Add the veggies into the batter and mix together, until the veggies are all coated by the batter.

7) Transfer the batter onto an 8x8 inch pan and pop in the oven at 350 degrees F for 20-25 minutes.

8) Take out of the oven when a bit golden at the top, cut up and enjoy J
