Lentil Stew


Ingredients:

* 2 large onions

* 7-8 celery sticks

* 7-8 Carrots

* 1- 28oz can of diced tomato (you can also use fresh)

* 1 pound of green lentils

* 1 pound of french lentils

* Seasoning of choice (I used paper, cumin and chili)

* Water that covers the hole stew by an inch


Procedures:

1. Dice the onion and sauté in the pot with a splash of water for 3-5 minutes, add water as needed to deglaze the pot

2. Meanwhile, slice the celery and carrots and when the 3-5 minutes are up add them to the pot

3. Also add to the pot the diced tomatoes, the lentils and the water (if you are using precooked lentils you will be adding them at the very end, 3-5 minutes before it is done cooking)

4. Then add the seasoning you like, I added paper, cumin and chili

5. Mix everything together and cover partially

6. When the stew boils, take of the lid and let simmer on minimum heat. It should take 30-40 minutes total to cook.
