Hanukkah Donuts (Sufganiyot)



Ingredients: -Dough 4.5 cups of flour 1.5 cups of plant based milk 1/2 cup of sugar  *  1/3 cup of oil *  2 tsp of dry yeast 1 tsp vanilla extract *  Pinch of salt -Filling * Chocolate * Jam -To fry * Oil


Procedures: 1. Put the flour in a large bowl, add the yeast and two teaspoons of sugar and stir for a few seconds. 2. Heat the milk on the gas until it becomes lukewarm. 3. Add the milk, sugar and vanilla and mix until dough is formed. 4. Add the oil and salt and continue to knead the dough for about 5-10 minutes until soft and supple dough (if needed add a little more flour) forms a ball. STEPS 1-4 CAN ALSO BE DONE IN A STANDING MIXER OR HAND MIXER IF YOU HAVE ONE 5. Lightly grease a bowl (may also be the one where we made the dough) Put the ball of dough and grease slightly from the top. Cover with a towel, put it in a warm place and let it rise for an hour or so (it should double in volume). 6. Put on a floured surface and roll with a rolling pin until you have a slab of about 0.5 cm thick. 7. Cut out circles with a cup with a diameter of about 5 cm/ 2 inches (those who are interested in larger donuts are welcome to use a circle with a larger diameter to cut). 8.Transfer the circles to a tray lined with baking paper/ paper towel; transfer near a heat source and let it rise for an hour or so. 9. Heat oil in a saucepan. When the oil is hot, but not boiling or too hot (you can check by taking a wooden spoon and putting it in the oil, if bubbles form all around it then its perfect. 10. Transfer the donuts/sufganiot to the oil and fry it on both sides by putting it in the oil for 1 minute or so on one side and then with a spoon turn to the other side for another minute. Remove from the oil to a plate lined with a paper towel to absorb the oil and cool slightly. I recommend to start with one doughnut to make sure it is good and then if good you can have 3-4 doughnuts at once (depending on the size of the pot)  11. Once the doughnuts cooled a bit, using the tip of a piping syring (or if you do not have one the tip of a sharp knife) make a hole in the center and then rotate it all around to create some space for the filing (repeat with all the doughnuts) 12. Then if you have a piping syring it is best, but if not take a bag and cut a small hole in the corner; add in the filing of your choice and pipe the filling into the doughnuts/ sufganiot 13. Sprinkle with powdered sugar right before eating
