◗Ingredients:
1 large zucchini or 2 medium zucchinis
2-3 cups of green beans
5-6 chopped celery
3-4 cups spinach (or any leafy greens)
4-5 cups veggie broth (or water)
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of salt
◗Procedures:
1. Cut the zucchini into quarter slices, cut the celery into large slices, and chop the green beans into thirds.
2. Add to a pot the zucchini, celery, green beans, seasoning of your choice and cover with veggie broth.
3. Bring pot to a boil and then reduce heat. Let it cook for 20-25 min, until the veggies are soft.
4. Add in the spinach and cook for another 2-5 minutes
5. Blend up the soup either with a blender stick or transfer it into a blender cup and blend until smooth. I find it gets much smoother in a standing blender than using a blender stick.
6. Then it is time to serve and enjoy. I normally freeze half the amount for a different time.
