Easy Pumpkin Mac & Cheese

◗Ingredients:
14-16 oz pasta of your choice (I used Fall Zucchette Pasta from Trader Joes)
For sauce:
15 oz Can of pumpkin puree (about 2 cup)
1/4 cup cashews
2 garlic cloves
1/4 cup nutritional yeast
Juice of 1 lemon
1/2 cup of water
◗Procedures:
1. Soak cashews for 4 hours in water, or if short on time soak in lukewarm water for 30 min to an hour.
2. Bring a pot of water to a boil. Meanwhile, prepare the pumpkin cheese sauce.
3.To prepare the pumpkin cheese sauce you will add to the blender cup the can of pumpkin puree, 1/4 cup of cashews, 2 garlic cloves, 1/4 cup nutritional yeast, juice of 1 lime and 1/2 a cup water and blend it all up until smooth.
4. by then the water should have boiled, add the pasta of your choice, I am using this Fall Zucchette Pasta from Trader Joes that is pumpkin shaped, and cook your pasta according to the instructions on the back.
5. Drain the water, put the pasta back in the pot, add the sauce and mix together.
6. Serve it up and enjoy :)
