Colorful Gnocchi -Vegan & Gluten Free



◗Ingredients:

Small red skinned potato

½ large sweet potato (or 1 small one)

½ large purple sweet potato (or 1 small one)

* You need a total of 2-2 ½ cups of any potato/sweet potato of your choice

1-1 ½ cups of flour of your choice (I use 1 to 1 GF flour)

¼ cup tapioca flour (optional- can add just more flour instead)

¼ cup psyllium husk (optional- can add just more flour instead)

Salt to taste


◗Procedures:

1) Peel, slice, boil or bake the potato/sweet potato of your choice and mash them up until smooth. If you are making multicolored gnocchi, do this in separate bowls.

2) Add gradually ½ cup flour to every ¾ cup potatoes/sweet potatoes; and mix it in well either with a fork or using your hands.

3) Add in the 1 tbsp of tapioca flour, 1 tbsp of psyllium husk and salt to taste to every ¾ cup of flour.

4) When you get a dough consistency, make a ball and place in the dough in the fridge to rest for 15-20 minutes.

5) Take the dough out of the fridge and make the dough into gnocchi, by either just making little balls or after making the ball rolling it on the back of the fork to create the lines.

6) When you rolled out all your dough, add to a boiling pot of water and let it cook for about 5 minutes.

7) Remove gnocchi using a spatula with holes on to a plate.

8) Serve with any sauce of your choice and enjoy fresh J
