Chickpea "Tuna" Salad- Vegan & Gluten Free (with homemade mayo)

◗ Ingredients:
○ “Tuna”:
1 cup chickpeas
4 nori sheets
1/2 small purple onion (or 1/4 a large onion)
3 spring onions
¼ cup dill
1 tsp smoked paprika
1 tsp garlic powder
½ lemon/lime, juiced
○Homemade “mayo”:
¾ cup cashew
1 lemon/lime, juiced
1 garlic clove
1 tsp black salt
1 tsp mustard
½ cup water
◗ Procedures:
1) Soak the cashews in water for 4 hours or lukewarm water for 30-60 minutes.
2) Once the cashews have been soaked, drain them, and prepare the cashew “mayo”.
3) Add to a blender all the mayo ingredients and blend together until smooth.
4) In a food processor add the chickpeas along with the nori sheets and mix in pulses until reaching a rough consistency
5) Next add in the onion, dill, smoked paprika, garlic powder, salt, pepper, and pulse until reaching a finer consistency, but still not mashed.
6) Add the “Tuna” into a bowl, mix in the cashew mayo (or if you want store bought vegan mayo) and add the juice of half a lemon/ lime on top, mix everything together and enjoy.
