Chickpea Flour Veggie Frittata



◗ Ingredients:

1 cup chickpea flour

1 large onion

6-8 mushrooms

¾ - 1 cup of leafy greens/ herbs (spinach, kale, cilantro, parsley, dill, basil…)

Any other veggies you enjoy (I add sometimes tomato or bell pepper strips)

1 tsp salt

1 tsp garlic powder

1 tsp cumin

1 tsp turmeric

¾ cup water- 1 cup water

(1 tbsp oil for cooking)

◗Procedures:

1) Dice the onion and mushrooms, chop up the greens, and dice up any other veggies you would like to add in.

2) To a pan add the onion with a splash of water and sauté for about 5 minutes until the onion becomes translucent, add water as needed to deglaze the pan.

3) Add in the mushroom next into the pan and sauté for another 3-5 minutes; if you are using other veggies also add them in and sauté.

4) Meanwhile go ahead and mix the chickpea flour with about ½ a cup of water and keep adding water as needed to get a smooth consistency, make sure the batter does not become too runny.

5) Add the spices into the batter and mix them in.

6) Add the sautéed veggies into the batter and mix together.

7) Add the leafy greens or herbs into the batter and mix it until everything is well coated with the batter.

8) Then heat up a pan with some oil and pour in the batter, let it cook for about 5 minutes.

9) Gently with a spatula go around the edges of the frittata and then use a plate to flip it and let it cook for another 5 minutes on the other side.

10) Flip it back onto a plate, serve and enjoy.
