Ingredients: Dough * 8 cups of flour of choice- I used 2/3 white spelt flour and 1/3 whole spelt flour (It is important to use more white flour than whole flour whatever flour you use as whole flour does not rise well) * 2 tbsp of yeast * 2 tbsp coconut sugar (or sweetener of your choice) * 2-2 1/2 cups lukewarm water * 1/3 cup of avocado or coconut oil Toppings * 2 tbsp maple * 2 tbsp water * 2 tbsp chia seed * 2 tbsp sesame seeds
Procedures: 1. Into a mixer add the flour, sugar and yeast and mix on low until well combined 2. Continue the mixing as you add the 2- 2 1/2 cups of lukewarm water slowly, at about 1/4 cup each time, you may not need even 2 cups of water 3. Next add in the oil of your choice 4. And let everything mix for about 10 more minutes 5. It might be necessary to add a bit more flour, depending on the consistency of the dough 6. Make your dough into a large ball, take a bowl and brush it with a bit of oil, then put in the ball of dough and brush it also with a thin layer of oil 7. cover the bowl with a peace of cling wrap and a towel and let it sit and rise for an hour to an hour and a half. 8. Then take the dough and cut it up to however many Challahs you choose to make 9. I made 2 small challah today and one large 10. to make your challah, divide the dough into three oven parts, and roll each of them out into snake like shapes, connect them all at the top and then braid them. To braid you want to take a strand from one side and move it over the middle strand over to the other side and then take a strand from the side you just got to and put it over the middle as you see in the video. 11. Once you have your challahs ready, put them on pre lined baking sheets and cover them with a cling wrap and a light fabric (not towel as it won’t let it rise), I use an apron I have for this; and let sit and rise for 30 minutes to an hour 12. Then take it off and it is time to add some maple syrup to the top to make the challah golden as well as some sesame seeds, or chia seeds or both 13. for the maple syrup add equal amounts water and maple syrup to a bowl and mix well, then take a brush and brush it well on the Challah; on top sprinkle the seeds of your choice 14. Then put in the oven at 350 degrees Fahrenheit (180 degrees celsius) for 40 minutes, if you have two trays (like I did); at the half way point flip between their positions 15. Take out of the oven, let cool, slice and enjoy! 16. I like to make plenty at once and freeze them for whenever I want to have Challah
