Carrot Cake


Ingredients: * 2 Cups Flour (I used spelt flour, but you can use GF flour to make it GF or any flour of your choice) * 2 cups of shredded carrots (either shredded by hand or bought, about 4 whole large carrots) * 1 cup nondairy milk of choice (I used almond milk) * 1/2 cup chopped walnuts (either prechoped or chop it yourself) * 2 flax eggs (2 tbsp flax meal + 4 tbsp meal) * 3/4 cup sugar of choice (I used coconut sugar) *1/4 cup oil of choice (I used coconut oil) * 1 tsp backing soda * 1 tsp backing powder * 1 tsp cinnamon * 1 tsp nutmeg * pinch of salt * 1 tbsp apple cider vinegar * 1 tsp vanilla extract


Procedures: ​1. In a bowl add the 2 Cups Flour, 1 tsp backing soda, 1 tsp backing powder, 1 tsp cinnamon, 1 tsp nutmeg, and pinch of salt; mix everything together 2. Next add the sugar and grated carrots; mix well 3. Add in the oil, apple cider vinegar, and vanilla extract and mix together 4. Add in the 2 flax eggs 5. Then add in the non dairy milk (It stoped filming for some reason); and mix well 6. Then finally add in the walnuts; mix all together and add water as needed (I ended up adding half a cup of water) 7. Pour mixture into pre lined cake pan (I just put some oil and then flour to make sure cake does not stick to pan) 8. Put into oven for 30 minutes, take out and do tooth pick test to know if it is ready 9. Let bake, cool and enjoy
