Butternut Squash Bread

Ingredients: * 1 medium butternut squash    *  1 cup of flour * ½ tsp. baking soda *  ½ tsp. baking powder *   ½ cup of sugar * 1 vegan egg (1 tbsp. flax meal and 2 tbsp water) *  1/3 cup coconut oil * Juice of 3-4 clementine’s * Pinch of salt


Procedures: 1. First peel and cut the butternut squash into medium pieces 2. Cook butternut squash in oven at 350 degrees Fahrenheit for 30 minutes or until soft 3. Meanwhile prepare the vegan egg by mixing 1 tbsp. flax meal and 2 tbsp water 4. Mix in a bowl all the dry ingredients: flour, baking soda, baking powder, sugar and salt 5. Take the butternut squash out of the oven and mash up 6. Add to the mashed butternut squash the coconut oil, clementine juice (or orange juice), and a vegan egg 7. Combine the wet and dry ingredients 8. Oil and flour the pan, then add in the batter 9. Bake in oven at 350 degrees Fahrenheit for 30 minutes or until fork comes out clean
