◗ Ingredients:
3-4 cups of broccoli florets
3-4 cups of cauliflower florets (~ 1/2 medium head)
2-3 cups of peas
1 large onion, chopped
1 tbsp salt
1 tbsp cumin
1 tbsp garlic
4-6 cups of veggie broth or water
◗ Procedures:
1) Chop the onion to large chunks. Add to a large pot a bit of veggie broth or water along with the onion and sauté for 3-5 minutes until the onion is translucent.
2) After 3-5 minutes add the spices and mix them through and let cook for another minute.
3) Add in the rest of the ingredients: broccoli, cauliflower, peas, and veggie broth.
4) Cover pot and bring to boil, then lower heat and let simmer for 15-20 minutes until the veggies are soft.
5) Turn of heat and blend the veggies into soup either using a hand held blender or a blender.
6) Serve and Enjoy. :)
