◗Ingredients (~ 12 muffins):
· 1 chia egg (1 tablespoon chia seeds seed + 3 tablespoons water)
· 1 ripe banana
· 1 tbsp almond butter (or peanut butter)
· 2 carrot
· 1 zucchini
· 1/3 cup plant based milk
· 1 tablespoon apple cider vinegar
· 1/4 cup walnuts, chopped (optional)
· 1 ½ cup oat flour
· 1 teaspoon baking powder
· ½ teaspoon baking soda
◗Procedures:
1) prepare 1 chia egg in your large mixing bowl and put it aside to set for a few minutes to become gelatinous.
2) When the chia egg is ready, add the banana and mash it in with the chia egg.
3) Grate the zucchini and the carrots, add the zucchini and carrots into the bowl and mix well.
4) Add the almond butter or peanut butter, and mix.
5) Add in the plant based milk and mix well.
6) Next add in the oat flour or any other flour of your choice, mix until well combined.
7) Then add in the baking powder, the baking soda, and apple cider vinegar, mix it all together.
8) Finally chop the walnuts, add to bowl and mix it all together until combined (optional).
9) When your batter is ready, line a pan with some oil, add the batter to the pan (I like to use an ice cream scooper)
10) Bake in the oven at 350 degrees for 20 minutes or until the toothpick comes out clean.
11) Let it cool, serve and enjoy (you can also freeze them for a later time).
