BEST QUESO EVER! - Easy & Vegan

◗ Ingredients:
1 large sweet potato (about 2 cups)
2-3 small/medium potatoes (about 2 cups)
3-4 carrots (about 2 cups)
1/3 cup of raw cashews
1 lemon/lime juiced
1 tsp garlic powder
1 tsp salt
¼ tsp chili flakes
1 tbsp nutritional yeast
½-¾ cup of water
◗ Procedures:
1) Soak the cashews for 4 hours in water (if you are short on time use lukewarm water and soak for 30 min to 1 hour)
2) Chop the sweet potatoes, potatoes, and carrots into large chunks
3) To a pot add a bit of water, a steaming tray and steam the sweet potatoes, potatoes, and carrots for 20 minutes or so until soft.
4) When the sweet potatoes, potatoes, and carrots are soft; and the cashews are done soaking it is time to prepare the queso.
5) In a blender add the sweet potatoes, potatoes, and carrots, the cashews, the lemon/lime juice, the garlic powder, salt, chili flakes, nutritional yeast and water (all ingredients).
6) Blend everything together until you reach a smooth consistency.
7) Then transfer to a storing container, I like to keep half in the fridge for the upcoming week and half in the freezer for another time.
8) Enjoy it on top of your nachos, fries, cooked veggies, raw veggies or just to dip your tortilla chips into :)
