Best Loaded Vegan Nachos


Ingredients:

TOPPINGS

Refried Beans:

3 cups black or pinto beans

1 large onion

1tsp of cumin

1 tsp of smoked paprika

1 tsp of garlic powder

½ tsp of black pepper

1 tsp of salt

Pinch of chili flakes

Basic Guacamole:

1 large avocado

1 lime/lemon, juiced

½ tsp salt

½ tsp of black pepper

Salsa (store bought)

Olives

Tortilla Chips

Procedures:

Refried Beans:

1. Defrost or drain liquid from the black or pinto beans.

2. Peel, dice to medium cubes and sauté (I use water) the onion until caramelized.

3. Add the onion to the bowl with the beans along with cumin, smoked paprika, garlic powder, black pepper, salt, and chili flakes.

4. Mash up either with a fork or using an immersion blender.

Basic Guacamole:

1. Cut open avocado and scoop into bowl.

2. Add the juice of 1 lime or lemon, as well as, the salt and black pepper.

3. Mash up either with a fork or using an immersion blender.

Queso Recipe:

NACHOS

1. Cover a plate with tortilla chips.

2. Add the refried beans, guacamole, salsa, queso and olives on top.

3. Dig in and ENJOY!
