Asian Style Vegetable Soup



Ingredients: * 1 lotus root   * 2 onions * 2 bunches of enoki mushrooms *  2 carrots  * 4 garlic cloves * 2/3 of an acorn squash  * 3 small broccoli heads * 2 bunches of Bok Choy  * Water or Vegetable broth (Homemade: https://youtu.be/jp8TS6joQ-U * Salt & Pepper to taste

Procedures: 1. Mince the garlic  and chop the onions in half & then slice finely; season them with some salt and pepper 2. Take a pot, add a bit of water or oil and sauté the garlic and onion for a few minutes 3. In the meantime slice the lotus root or any other root vegetable of your choice into thin slices and add that into the pot 4. Then slice the carrots into thin coins and add to pot and continue sautéing 5. Now dice the acorn squash and add to the pot 6. Add water or vegetable broth to the pot until it covers all the vegetables;  Continue cooking the vegetables for a couple more minutes 7. Meanwhile cut up the broccoli and then add it also into the pot a 8. Next add in the mushrooms and add more liquid if necessary 9. finally add the bok choy or any other leafy greens, turn off the heat and let it sit for a few min before serving it 10. Serve it and You can keep the leftovers in the fridge for the upcoming days or freeze it for a later time
