Dal



Ingredients: *  1 Large onion  * 2 large carrots (or 3 medium) * 1 ½ cups of a cauliflower florets (1/3 or so of the whole cauliflower) * 1 ½ cups of butternut squash (I get mine prechopped) * 1 medium zucchini * 2 cups frozen green beans * 2 cups of peas *  1 cups red lentils that were soaked for 4-8 hours and then washed * ½ a can of coconut milk (about 7 Fl oz.) *  1 tsp. curry *  1 tsp. cumin *  1 tsp. turmeric *  1 tsp. black salt * 1 tsp. pink Himalayan salt


Procedures: 1. Dice the onion to medium cubes 2. Slice the carrot to half coin shapes 3. Chop the cauliflower into small florets 4. Cut butternut squash into small cubes (I dice mine smaller than what I get them diced at the store) 5. Dice the zucchini 6. Once you have all ingredients ready, warm up a large pot and add vegetable broth to the pot 7. Add in the onions, carrots, and cauliflower; let it cook for 5-7 minutes 8. In the meantime, mix the red lentils with 1 ½ - 2 cups of warm water in a blender to create a lentil paste 9. Once the 5-7 minutes are up, add in the green beans and zucchini to the pot for another 3-5 minutes 10. Next add in the lentil paste, ½ a can of coconut milk, and water until everything is covered up. Stir together 11. Add in the condiments to taste and stir again. Let cook for another 10-12 minutes 12. Add in the peas to the pot, stir together and cook for the final 3-5 minutes
