15 Minute Gazpacho- A cold summertime soup

◗ Ingredients:
○Gazpacho Soup:
2 slices of bread (I use GF buckwheat bread)
1 can of diced tomatoes (28oz)
1/4 of long cucumber (one spall cucumber)
1/4 of an onion
1/2 red pepper
3 garlic cloves
3-4 tbsp unfiltered apple cider vinegar
salt and pepper to taste
○Gazpacho Toppings:
Cucumber
Tomato
Onion
Pepper
and anything else you would like
◗Procedures:
1. Dip bread in water for a few minutes
2. Chop the vegetables for soup into large chunks
3. Add all ingredients into high speed blender with approx. 1 cup of water
4. blend until smooth
5. add ice and refrigerate until time to eat
6. serve with toppings
