1 Pot Quinoa Curry



◗ Ingredients:

1 cup quinoa

1 large onion

3 garlic cloves

2 medium potatoes

1 small zucchini or 1/2 large

2 cups broccoli

1/2 pack tofu cubed

1/2 tbsp curry powder

1-2 cups leafy greens

1 cup coconut milk

6-8 cups water or veggie broth (enough to cover everything)


◗ Procedures:

1) Soak quinoa in water for at least 4 hours and up to 12 and rinse well.

2) Slice the onion and mince the garlic; add to a medium pot with a bit of water or veggie broth and sauté until translucent.

3) Meanwhile, chop or dice all the veggies you chose (you can use the same ones I listed above or if you have other veggies on hand or that you enjoy better feel free to use them instead) and tofu.

4) When the onion is translucent add to the pot all the veggies you chose (except any leafy vegetable), the tofu, the drained quinoa, and the curry powder (along with any other spices of your choosing).

5) Cover everything with the liquid of your choice and bring to a boil.

6) When boil turn down the heat and let it simmer for 15-20 minutes until the water is absorbed and all the ingredients are cooked well.

7) When ready, add your leafy greens and coconut milk; mix it together and let it sit for a bit to absorb the flavors.

8) Serve and enjoy this yummy quinoa curry. :)
